Adapted from her grandmother, Chrissie Dermody’s recipe!
Ingredients:
12 oz. cranberries
3/4 Cup ruby port wine (substitute with a robust red wine if needed)
2/3 Cup sugar
1 orange: zest & set aside, discard pith, and chop
Method
Combine cranberries, wine & sugar in a saucepan and stir. Bring to a boil, then stir in the remaining fruit. Reduce heat to simmer until cranberries pop – don’t be afraid to help them along with a potato masher after about 10 minutes. Serve chilled.
