Brown Butter, Sage, Butternut Squash & Sausage Pasta

A creamy pasta dish made with blended roasted butternut squash, browned butter, sage, and sweet Italian sausage. The squash forms the base of a smooth sauce, while the sausage adds richness and protein. It’s a practical, hearty meal that delivers balanced flavor without being heavy or complicated.

INGREDIENTS

  • 2½ cups cubed butternut squash
  • 1 white onion, quartered
  • 2 garlic cloves
  • Salt, black pepper, nutmeg
  • 6–8 fresh sage leaves
  • Butter
  • ¾ cup half & half
  • ¼ cup parmesan
  • Olive oil
  • ½ cup chicken broth
  • 1 lb pasta
  • ¼ cup pasta water
  • 16 oz sweet Italian sausage

INSTRUCTIONS

  1. Toss squash, onion, and garlic in olive oil. Roast at 400°F for 15–20 minutes, flipping halfway.
  2. Add roasted vegetables and chicken broth to a blender and purée until smooth.
  3. Cook pasta according to package directions. Reserve ¼ cup pasta water.
  4. Brown sausage in olive oil. Remove and set aside.
  5. Add butter to the pan and let it brown slightly. Add chopped sage and cook until fragrant.
  6. Stir in the squash purée, salt, pepper, and nutmeg.
  7. Slowly add half & half, then parmesan.
  8. Add pasta water to adjust thickness.
  9. Add sausage and cooked pasta. Toss to combine.
  10. Serve with extra parmesan.
