Brown Butter, Sage, Butternut Squash & Sausage Pasta

INGREDIENTS
- 2½ cups cubed butternut squash
- 1 white onion, quartered
- 2 garlic cloves
- Salt, black pepper, nutmeg
- 6–8 fresh sage leaves
- Butter
- ¾ cup half & half
- ¼ cup parmesan
- Olive oil
- ½ cup chicken broth
- 1 lb pasta
- ¼ cup pasta water
- 16 oz sweet Italian sausage
INSTRUCTIONS
- Toss squash, onion, and garlic in olive oil. Roast at 400°F for 15–20 minutes, flipping halfway.
- Add roasted vegetables and chicken broth to a blender and purée until smooth.
- Cook pasta according to package directions. Reserve ¼ cup pasta water.
- Brown sausage in olive oil. Remove and set aside.
- Add butter to the pan and let it brown slightly. Add chopped sage and cook until fragrant.
- Stir in the squash purée, salt, pepper, and nutmeg.
- Slowly add half & half, then parmesan.
- Add pasta water to adjust thickness.
- Add sausage and cooked pasta. Toss to combine.
- Serve with extra parmesan.
